My girls love pikelets and they are especially handy to make for dance canteen duties, I had previously been making them without adding essential oils to flavour them however on the weekend I decided to be brave and try them with added flavours.
Ingredients
1 cup self raising flour (I used white, next time I am going to try gluten free)
½ cup dextrose
¾ cup milk (I used full cream)
1 egg
3 drops Orange essential oil
Melted butter or similar to grease pan
Butter or margarine to serve
Sift flour and dextrose together into a bowl with a pinch of salt (I used Pink Himalayan Salt
Whisk milk,egg and essential oil together, then add to dry ingredients, whisking until smooth
Heat a non-stick frypan over medium heat. Grease pan. Drop level tablespoons of mixture into the pan and cook for half a minute or until bubbles appear on the surface
Turn over and cook the other side for 1 minute until golden
Allow to cool and serve with butter.
